If your wine requires to age, it requires to age well. It is very important to have right storage for your wine collection. If your wine isn't aged at the appropriate humidity levels, light levels and temperatures, it could be easily destroyed.TEMPERATURE: The temperature in your wine storage should be stable. 12-15ºC (54-59ºF) is a great temperature to store your wines. Most importantly, reduce frequent temperature fluctuations because high temperature can destroy the real taste of wine, and extremely low temperature can stop it from getting stronger.
STORAGE: Bottles are best stored on their sides to keep the cork moist. If the bottled wine does not stay in contact with the cork, the cork will dry out and allow air into the wine. If you are using wine refrigerator to store your wine for longer time, it is a good idea to eliminate the electrical devices such as bulbs and tube lights from the wine refrigerator. Always take away wine racks which are anywhere placed close to a light source.
HUMIDITY: A relative humidity of 50-70% will keep the corks in a supple condition and keep air out. The interior part of your storage should be breezy and cool. Don't let cold outside air mix with warmer air inside your storage. When cool and warm air get together, it makes it mold and moisture.
SULPHITE LEVEL: If your wine is being aged for more than 6 months, add an extra 1/4 tsp to 23 litres of wine. This will ensure the safety of your wine.
LIGHT: It is in your best interest to store wine in a dark location. Try to keep the cellar dark when not in use, as light can ruin any type of wine. Light also causes the wine to age prematurely. Avoid fluorescent lights - they emit UV light that can be harmful to your wine. They are bulbs and tube lights especially made for wine storage and it is a very good idea to invest in them.
MOVEMENT: Store your wine in a location that is free of vibration. Constant agitation tends to disturb sediment, creating a haze.
